Member Recipe - Spaghetti Squash with Mushrooms


1 spaghetti squash - slice lengthwise brush with olive oil, sprinkle with salt and pepper, cook for 1 hour at 400. Remove from oven and rake with fork to get spaghetti.

Sauce - 1 container sliced shiitake mushrooms, 1 container sliced Crimini mushrooms, 1 can of diced fire roasted tomatoes with garlic and onion.


Saute both containers of mushrooms with olive oil for ten minutes or so. Add a little extra garlic saute for a couple of minutes. Add tomatoes, some basil and oregano. Salt to taste.

Let all come together on low for 10 minutes. Put on top of spaghetti squash!
